Tropical Coconut Slice
Nut Free, Vegan, Dairy Free, Gluten Free, Refined Sugar Free
Makes 12 slices.
Prep time: 30 minutes.
Cooking time: 5 minutes.
Freezing time: 2 hours.
- 250g dates*, soaked in hot water for 15min and then drained
- 45g coconut cream, chilled (white part only)
- 15g lemon juice
- 30g unhulled tahini*
- 10g rice malt syrup*
- 45g shredded coconut*
- 50g desiccated coconut*
- 60g coconut flour*
- 1/2 tsp vanilla powder*
- 20g flax meal (grind flax seeds* with a coffee grinder or mortar and pestle)
Coconut layer Ingredients:
- 120g coconut cream, chilled (white part only)
- 30g lemon juice
- 60g rice malt syrup*
- 20g coconut oil*, melted
- 100g shredded coconut*
- 40g coconut flour*
- 40g desiccated coconut*
Passionfruit layer ingredients:
- 100g coconut cream
- 50g passionfruit pulp
- 5g custard powder (or cornstarch)
- pinch of turmeric* (for colour)

Base: blend dates, coconut cream, lemon juice, tahini and rice malt syrup until smooth. Add remaining ingredients and mix until a dough forms. Press dough into lined baking tin and freeze whilst making coconut layer.
Coconut layer: Mix all ingredients until a dough forms and press coconut layer on top of base layer. Freeze whilst making passionfruit layer.
Passionfruit layer: In a pan, combine all Passionfruit layer ingredients until smooth and heat on medium-low heat for 2 min whilst stirring continuously. Increase heat until boiling and continue stirring for 2-3 min until mixture thickens. Once slightly thicker, pour over coconut layer and freeze for 1-2hrs or until firm.
Remove from freezer and slice. Enjoy! To store, keep in an air tight container in the fridge
