
Coconut oil is very heat stable so it makes an excellent cooking and frying oil. It has a smoke point of about 180 degrees C. Because of the natural stability of coconut oils it is slow to oxidise and thus resistant to rancidity, lasting up to two years. As coconut oil is high in natural anti-oxidants, it is not necessary toĀ refrigerate it.
