
It has been extracted by hand from its pineapple shaped core for centuries. The flower shoot is cut out and the sap collected. This dark agave is from the region of Ixmiquilpan of central Mexico an indigenous group called the Hnahnu have been able to successfully commercialise agave syrup and nopal. The wild maguey cactus species is used to make this agave. It is raw, processed at less than 40 degrees Celsius.
