Organic green lentils are green-brown in colour and hold their shape quite well when cooked. These lentils are popular in India, where they are called dal.

How To Cook

Soak overnight before cooking to reduce cooking time and improve digestibility. Drain and rinse. Cook over the stove - bring to boil, reduce heat to a simmer. Cook for 35-45 minutes, skimming away foam from water.


Lentils are high in protein - one cup of cooked lentils contains 18 grams of protein. One cup of lentils also has 6.6 milligrams of iron, which is about one-third of what you need for the entire day. Green lentils are also full of fibre and are high in magnesium.
